These make for a fantastic snack, ‘to-go’ food or party dish, and are so easy to make!
You can make variations on the type of cheese you use, and of course this would work just as well with our Kiln Roast trout.
- 120g packet of RR. Spink & Sons Kiln Roast Salmon
- 1 tbsp olive oil
- 1 onion finely chopped
- 125 g of frozen peas
- 6 eggs
- 100ml milk
- 85g crumbled feta
Heat oven to 180C.
Place a small frying pan over a medium heat and fry the diced onion until soft.
Add the peas and cook for 2-3 mins more, then remove and cool.
Once cool, flake the kiln roast salmon and mix with the peas and onions.
Spoon the mixture evenly into the cavities of a greased, non-stick muffin tin.
Beat the eggs, milk and ¾ of the feta in a small bowl.
Spoon the egg mix evenly into the muffin tins.
Sprinkle over the remaining feta and cook for 18-20 mins or until set.
Allow to cool for a few minutes then remove from tin and eat warm or cold.
