All the flavours of a classic Caesar Salad, given a summery twist with the addition of our Hot Smoked Trout. Perfect with a chilled glass of white wine.
Serves 4 as a side, 2 as a main
- 120g RR. Spink & Sons Hot Smoked Trout
- 2 heads of Romaine lettuce, shredded
- 2 slices bloomer or sourdough bread for croutons, cut into cubes
- 1 garlic glove, crushed
- olive oil
- extra Parmesan, grated
- salt & pepper
For the dressing
- 1 garlic clove, minced
- 6 tbsp mayonnaise
- 1 tbsp white wine vinegar
- black pepper
- 3 tbsp grated Parmesan
- juice of ½ lemon
- 1 tsp grated lemon zest
In a small mixing bowl, combine all of the ingredients for the dressing.
Heat a little olive oil in a frying pan on a medium heat.
