Healthy & happy new year recipe ideas

With the excesses of December’s festive dining behind us, January is always a good time to re-set some of our less salubrious eating habits.

Eating lower-fat proteins and getting more Omega-3s into our diet is something we can all aim to achieve when it comes to planning family meal times. The great news is that with the right ingredients and a little recipe inspiration, healthier meals can also be delightfully tasty!  

Our smoked trout and salmon are something of a superfood, being low in fat and protein-rich. Our chef Scott Fraser has put together these recipes for delicious dishes to liven up the dark days and keep the winter blues at bay.

Smoked trout with apple ajo blanco, pomegranate and poppy seeds

Whilst it might not be a traditional winter dish this light soup, served chilled, evokes thoughts of sunnier times and climes. This is a creamy soup made with almonds and featuring fresh flavours of green apple and pomegranate and topped off with our cold smoked trout.

Kiln Roast Trout and Clam Hot Pot

This fresh dish takes inspiration from the Far East, and incorporates our kiln roast trout with sweet clams, making it a seafood special that’s sure to please. Serve with rice noodles for a low-carb meal option.


Kiln Roast Trout with Puy Lentils and Mustard Dressing

Lentils are often referred to as brain food, and this simple to prepare dish combines our kiln roast trout with wholesome puy lentils and a tangy wholegrain mustard dressing. A side of greens like seasonal winter kale and you have a warming winter’s delight.

Fillet of beef and fillet of Loch Etive Trout – A modern surf & turf

And finally, if you’ve ever wondered what the movie stars eat, then look no further!  We were delighted when we learned that fillet of Loch Etive trout was served as part of a modern version of a ‘surf & turf’ dish at this year’s Golden Globes awards, held in Los Angeles in January.
