Strips of cucumber wrapped in RR Spink's Edinburgh Gin Smoked Trout garnished with lemon creme fresh and lemon peelA refreshingly simple smoked trout canapé that can be prepared in advance of picnics or parties, leaving you free to concentrate on hosting!

INGREDIENTS

  • 100g RR. Spink & Sons Edinburgh Gin Loch Etive Smoked Trout
  • 1 cucumber
  • 1 lemon
  • 100ml creme fraiche
  • 1 teaspoon of fresj chives finely chopped

METHOD

  1. Peel the cucumber with a potato peeler then cut the cucumber in half lengthways and scoops out the watery seeds with a teaspoon
  2. Keep one half for salad (or to put in your Gin and Tonic!)
  3. Take the other half and cut 10 by 1cm sticks
  4. Wrap the end of each stick with half a slice of smoked trout
  5. Mix a teaspoon of lemon juice with the creme fraiche, serve on the side or pop into a piping bag and dot over the trout
  6. To finish, grate the zest of half a lemon over the trout sticks and grind over a little black pepper
