If you’ve never enjoyed fresh trout before, you’ll be delighted by the mild flavours of this fantastic fish. All of our trout is sustainably farmed in Loch Etive, a scenic sea loch on Scotland’s beautiful West Coast.
For those looking for a healthy option, sea trout is an excellent choice. Packed with omega-3s, it’s low in fat as well, of course, as being delicious. A clean-flavoured fish dish with pops of citrus, and briny notes from the shrimp and samphire. Samphire’s salty, verdant tang is a natural foil for so many seafood dishes. Jersey Royal potatoes enjoy a short season through the early summer, but any slightly waxy salad potatoes work just as well.
Due to its delicate flavours, trout is often served with almonds in classic French cuisine. This modern take is an almond-crusted trout fillet served with wilted Swiss chard, although any wilted green such as spinach or kale would work equally well. Grits are a USA-dish made with cornmeal,and can be found in specialty food stores.
Another take on the lovely contrast of trouts with nuts, soft, sweet pecans also work deliciously well. We love the simplicity of this dish, simply seasoned with lemon, salt & pepper and parsley for a clean-tasting light supper.
This aromatic dish takes inspiration from the far east, combining those aromatic flavours of coriander, chili and sticky hoisin sauce. Served with basmati rice, glazed green beans and peanuts, this makes for a tasty mid-week meal.
