A new twist on the old favourite – pizza night! This dish is a fun way for kids to get into cooking and of course enjoying their healthy smoked salmon.
If you have a frying pan with an oven proof handle you can get a great shape for you pizza. If not a normal baking sheet will do. This also makes a great sharing dish for a buffet with friends and family.
- 300g of pizza base mix (or use you own recipe to make 600g of pizza dough )
- 6 tbsp of tomato pasta sauce
- 100g packet of RR. Spink & Sons Cold Smoked Salmon
- 1 small red onion sliced
- 1 packet of basil, just the leaves, not the stalks
- 2 tbsp grated parmesan
- 125g of ricotta drained
- 1 egg yolk beaten
Heat the oven to 210C.
Make your pizza dough according to the instructions on the packet, or recipe.
Divide the dough into 2 equal balls and roll out on a floured surface to about 30cm diameter.
Place one of the rounds on a floured baking sheet or ovenproof pan. Top the pizza base with the tomato sauce, smoked salmon, red onion, ricotta, basil and parmesan.
Place the other round of dough on the top and crimp the edges together to seal.
Make a small hole in the top of the dough to help some of the steam escape.
Brush the top with beaten egg yolk and grind over a little black pepper.
Bake in the centre of the oven for 15 minutes until crisp and golden.
