A real summer-night treat, this is a delicious no-carbs dish featuring our classic cold smoked salmon. You can make the wraps ahead of time, meaning this can be a quick to assemble recipe for a weeknight or when you have friends round.
Crowdie is a delicious Scottish cream cheese; well worth looking out for your your local deli or supermarket. One to share, or keep all to yourself!
- 1 packet of RR. Spink Cold Smoked Salmon
- 3 eggs
- 75g of skinny Crowdie cheese
- handful of rocket leaves
- 1 lemon zest and juice
- cold pressed rapeseed oil
- salt and freshly-ground black pepper
First make the wraps. In a small bowl whisk the eggs with a little salt and pepper.
Place a 20cm non-stick pan onto a medium heat and add a tsp of rapeseed oil.
Pour in half of the egg mixture and tilt the pan until the whole surface of the pan is covered. Cook for 1-2minutes until the omelette is set and slide it onto a plate. Repeat with the rest of the egg mixture. You should have two thin omelettes.
To assemble. Place the Crowdie into and bowl and season with pepper, some grated lemon zest and a squeeze of lemon juice.
Spread this mixture onto half of the omelette and top with half the smoked salmon. Dress the rocket with a little lemon juice and a drizzle of rapeseed oil and add to the salmon.
Roll the omelette up like you would a fajita (you may need t used a tea towel to help you) and enjoy with a glass of Sauvignon Blanc.
