The ideal balance of sweet and savoury, this is one of our favourite healthy smoked salmon recipes to serve for a leisurely breakfast.
Serves 2 – 3
For the topping:
1 packet of RR. Spink & Sons Cold Smoked Salmon (100g)
80g Greek style yogurt
75 ml maple syrup
For the pancakes:
1 small sweet potato (200g)
200g plain flour
2 tbsp honey
1 tbsp butter

To make the sweet potato pancakes, pierce the sweet potato skin a couple of times with a fork and microwave on full power for 3-5 minutes until soft all the way through – leave to cool.
When the potato is cooled, cut in half and scoop out the flesh, discarding the skin.
Mix the sweet potato mash with the flour and honey, then loosen the mixture with the milk.
Portion the mixture into roughly 8-9 batches, and fry in a non-stick pan until lightly browned in each side.
To serve, layer three or four pancakes in a stack with a couple of slices of the smoked salmon; top with a dollop of Greek style yogurt and drizzle with maple syrup.
